Made with Hokkaido-grown soybeans and wheat from Ōmi, this soy sauce is carefully crafted using only selected domestic ingredients. The mash is slowly fermented and aged in wooden barrels for two years with natural sun-dried salt. A touch of mirin is added to soften the sharp edges of the saltiness, creating a rounder and smoother flavor.
While it is excellent for simmered dishes, its gentle taste also makes it perfect for enjoying straight with sashimi or over a bowl of rice with a raw egg.
