Miwaku Ume

Using the "Saori" plum, harvested at the largest plum grove park in Aichi Prefecture, located in Chita City. This plum is suitable for making plum wine, as it has a strong acidity and a lot of flesh. It has a refreshing aroma typical of unripe plums. The sweetness is moderate, and a fruity acidity is clearly present. The sake is based on pure rice and has a smooth, easy-to-drink mouthfeel, with a bitter orange-like bitterness that tightens the aftertaste.

As a pairing, it goes well with vegetable tempura, spring rolls, and chicken keema curry. You can enjoy it as it is, chilled, with ice, warmed, mixed with soda, or even as a cocktail base.


Production method:
Using a traditional Junmai sake made from the locally harvested rice "Banzai" in Okazaki, which was presented to Emperor Taisho during his coronation 100 years ago. It is brewed in collaboration with local contract farmers and the local brewery. We maximize the amount of fruit juice and pulp to enhance the fruitiness of our authentic fruit liqueur, which is made without any acidity agents or additives. We are committed to creating a strong fruit sensation with the natural taste and aroma of the fruit. We use ice sugar and Junmai sake, and slowly age the liquor to extract the maximum essence from the green plum. The use of Junmai sake adds smoothness and lightness to the flavor.
